Potato Pancakes

What you need: 

5 potatoes, grated
3 onions, grated
2 egg replacers (http://vegweb.com/index.php?topic=7678.0)
3/4 cups flour
salt and pepper, to taste
vegetable oil, as needed

What you do: 

1. In a mixing bowl combine all ingredients. If your batter is too thick, slowly mix in some water until you reach a good consistency (a little thicker than traditional pancake mix).
2. Heat oil, and cook in a deep frying pan until golden brown.
Serve with apple sauce.

could I grill these instead of frying themor would it not work?

I highly doubt that you could grill these and turn out with the same product.  They are usually eaten during Hannukah.  Oil is a large part of this holiday's history.  If you can get them to work by grilling please let me know.

I put mine on my panini press (without pressing the top down) and they turned out nicely golden brown and without all the fat! They were ok.  Kind of plain. Maybe it was because I only used half an onion- 3 sounded like a LOT.

Thanks for this latkes recipe. They stuck together better than any vegan latke I've ever made and we had them tonight for Chanukah!

I made these for brunch. And i was a little concerned at not having to squeeze off the excess water. The result was a very tasty and lovely textured pancake. I finished mine off in the oven whilst i cooked the accompaniments. So they were crispy on the outside and soft on the inside. But be warned - they are very filling! I would only have these for breakfast if i was going for a long walk afterwards. ;)

My omnivore likes to make these when we have lots and lots of potatoes and want to cook them fast!

The best way to cook is as follows:
Get the oil pretty darn hot in a large frying pan. Then toss the whole mess in and spread it out. After about 2 or 3 minutes, use a flat spatula to "cut" it into quarters, then flip the quarters individually. This makes them easy to handle and yummy crispy on the edges.

The best side is as follows:
While the pancakes are cooking, fry up some zucchini slices and some sweet peppers in a smaller saute pan - and be sure to season with salt & pepper on that too.

The best way to serve is as follows:
Plate one of the pancakes, smear a hearty spoonful of red pasta sauce on top, stack with the zuke/pepper combo, then put another pancake on top. Presto! An italian potato tower!
