Potato Lentil Curry Soup
1 tablespoon olive oil
1/2 onion, diced
2 cloves garlic, minced
1 carrot, peeled and cut into small rounds
1 small potato, peeled and diced into smallish pieces
1 (14 ounce) can vegetable broth
1 tablespoon tomato paste
1/2 tablespoon red curry paste
2 teaspoons cumin
1/3 cup lentils
1. Put olive oil into a small pot and heat on medium-low. Add onion and garlic to the heated oil; cook for 5 minutes until onions are soft and translucent.
2. Add the rest of the ingredients. Add 1/2 cup water, stir, and bring to a boil.
3. Cover and simmer for 20-30 minutes until potatoes, lentils and carrots are soft. Pour (or ladle) into two bowls and enjoy!
