Sour Lentil Soup

What you need: 

2 cups brown lentils
8 cups water
1 large onion, sliced
4 cloves garlic, chopped
1/3 cup olive oil
1/2 cup fresh parsley and/or coriander, chopped
1 tblspn plain flour
1/2 cup cold water
at least 1/3 cup white vinegar
salt & freshly ground black pepper to taste

What you do: 

- rinse lentils well - place in large pot with water, onion, garlic, oil and herbs. Stir to combine. Bring to boil. - lower heat, cover and allow to simmer for 45 minutes. DO NOT STIR WHILE SIMMERING. - place flour and water in a screw-top jar and shake until thoroughly combined. Add to soup and stir until mixture thickens slightly. - Add vinegar to taste (should have a satisfying tartness) and season to taste.
ENJOY LARGE BOWLFULS WITH CRUSTY WHOLEGRAIN BREAD.
