Portobello Sandwich

What you need: 

1 portobella mushroom, scraped and cap removed, oil top
2 slices toasted whole wheat bread
spring salad mix, as desired
1 steak tomato, sliced
dried oregano, to taste
red wine vinegar, to taste
pepper, to taste
garlic powder, to taste
kosher salt, to taste
1 small avocado

What you do: 

1) Start by preparing your ingredients. Sprinkle the top of the portobella with salt, pepper, and garlic powder. Sprinkle both sides of the tomatoes with oregano, pepper, and salt. Pour about 1 tablespoon of red wine vinegar in a small bowl.
2) Heat skillet over medium heat and coat with non-stick spray. Place portobella and tomato slices on skillet. Flip tomato slices and portobella once. Remove when they become soft. Place tomato slices in the red wine vinegar and mix to coat.
3) To assemble, spread avocado over the bread slices. Pile on a generous amount of spring salad mix, marinaded tomato slices, and top with portobella and serve. Enjoy!!
