Pecan Waffles

What you need: 

3 1/2 tablespoons golden flax seed finely ground
12 tablespoons water
1 1/2 cups plain soy milk
1 tablespoon vinegar
1 1/2 cups unbleached self-rising flour
3 tablespoons maple syrup
3 tablespoons canola oil
3/4 cup finely chopped pecans

What you do: 

Beat finely ground flax seed with water until it forms a beaten egg consistancy. Mix vinegar into soy milk and let sit a couple of minutes. Add flour 1/2 cup at a time to the flax seed mixture, alternating with 1/2 cup of the curdled soy milk, until all are incorporated. Mix in maple syrup and canola oil, then add pecans.
Ladle onto hot waffle maker and cook until steam slows.

SO HOW'D IT GO?

I wanted these to be good, but unfortunately, they weren't.  Followed recipe exactly and waffles were wrecked.  I added 1/2 cup flour and that helped, but they look gummy, pale, and tasted bleh.  I suspect there is something with adding the flour in progressively and batter becoming overmixed.  Never got a crispy waffle out of the entire batter.  If anyone is able to figure this out - please let me know.

So I have no idea what happened but these waffles turned out horriable. I didnt have self rising flour, but I used 1/2 tsp baking powder and 1/2 tsp salt for each cup to compensate, so that shouldnt have been a problem. I feel like maybe there was too much oil. I used the Ener-g egg replacer like the previous reviewer said and left the waffles on for a good ten minutes but they still werent cooked on the inside..and leaving them on longer didnt help, they just turned into a glob of mushy waffle, that wouldnt come off my iron even with oil brushed on. I also ended up adding more maple syrup, some vanilla and brown sugar because I felt that the batter really tasted bland. I really wish these had turned out better.

This recipe is fool-proof!  These waffles can be whipped up in notime.  I use the same amount of Ener-G egg replacer to substitute for the flax seed.  I can even add blueberries or vegan chocolate chips in place of the pecans for a different flavor.  The waffles are crispy on the outside and light and fluffy on the inside--definitely a new favorite that I make whenever I get a craving for waffles ;D.
