Peanut Butter Cookies
2 sticks of soy margarine
2 2/3 cups of flour
1 teaspoon of baking soda
1 teaspoon of salt
3/4 of a cup of peanut butter
1 cup of brown sugar
1 tablespoon of Ener-G plus 1/4 of a cup of water
2 teaspoon of vanilla extract
white sugar (unrefined)
Let the soy butter get soft and mash it up with a fork. add the brown sugar, egg replacer, and vanilla extract. Mix. Add peanut butter. Mix. Add the dry ingredients. Mix. Roll into balls and then roll them in white sugar. bake at 375 degrees Fahrenheit for 10 minutes. (The bottoms will be lightly browned and they might seem a bit squishy.) Let them sit for a wee bit on the pans to determine if they are too raw.
Variation: add 3/4 of a cup of vegan chocolate chips.
These are so bad for you I would not recommend ever eating them. But, on the other hand, they are the most delicious peanut butter cookie that ever existed, will exist, and is existing now. Also, you have to use the disgusting, unhealthy, commercially produced peanut butter with all the extra oil and stuff in it.
