Open faced Reubens.
Good Rye or Pumpernickle bread
Tofurky slices-I like the Peppered ones
Good raw Sauerkraut
Vegan cheese-jack or Swiss (if you can find it). I use Follow Your Heart Jack
Russian Dressing (ingredients follow)
Veganaise
Organic
Dill pickle or dill relish
Sweet onion
I haven't put amounts, as I don't know if you're feeding just you, or a crowd. Toast your bread, and put on an oven proof plate-or a cookie sheet if you're making lots.
Now the dressing: finely mince your pickle-a baby gherkin if it's just for you, or lots if it's for more-about 2 Tbs. per person. Finely mince a little sweet onion, about 1/2 Tbs. Put about 2 Tbs. Veganaise and 1Tbs. Ketsup in a bowl, add the pickle and onion, and mix well.
To assemble the sandwiches:turn your oven to broil, and move a rack to the high slot. Slather the dressing on the bread, add Tofurky slices, then sauerkraut, then thinly sliced cheese. Put them in the oven just until the cheese melts and gets a bit brown, about 3-4 minutes. Serve with a fork and knife, and have your napkin ready. These are messy, but oh so good!
You can sub your favorite slices for the Tofurky. "beef" would be good, or seitan. I just like the ease and taste of Tofurky. All in all, these take under 10 minutes, and they're good enough to serve company.
