Onion Rings
5 onions (large)
1/2 cup hot sauce (any preference)
1/2 cup Worcestershire sauce (your favorite brand)
1/2 cup (or more) yellow corn grits
1/2 cup (or more) flour
garlic powder
cinnamon
cumin
chili powder
black pepper
sage
dried mustard
any other seasonings you like!
100% pure soybean oil (enough for an inch in the pan)
Cut the onions into fairly thick slices. Place them in a large bowl and coat with the Worcestershire/hot sauce concoction. Let these marinade for an hour, stirring occasionally to get all the onions thoroughly coated.
Heat the oil to frying temperatures. Mix together the grits, flour, and seasonings. The sauce covers the seasonings quite a bit, so use a lot of them to make sure you taste them. You can also add more or less of anything, or anything else you can think of that you might like in them.
Coat the onions well in the liquid then, coat them well in the flour mixture and drop into the hot oil. Do not touch them for a few seconds when they are first dropped in or else you'll lose all the breading. Brown on both sides and transfer to a baking sheet lined with foil and paper towels. Continue until all the onions are done and enjoy!
**I got bored one night and made this up. The grits are optional, but they keep the onions from getting otherwise too oily.
