Oatmeal Cranberry Muffins

What you need: 

1 cup of all purpose flour
1 cup of oatmeal flour*
1 cup of soaked, dried cranberries, preferably sweetened
1/2 cup sugar
3 1/2 teaspoon baking powder
egg substitute to equal one egg
1/4 teaspoon salt (may be omitted)
3/4 cup soy or rice milk
1/3 cup neutral-tasting oil
a handful of sunflower seeds, chopped almonds, etc.

What you do: 

*To make oatmeal flour, whizz oatmeal in a food processor until finely ground
Pre-heat oven to 400 degrees F.
Combine dry ingredients in a medium-sized bowl. Add wet ingredients, adding the egg replacer first. Add cranberries. Add seeds and/or nuts. Fold in until the batter is just moist; do not over-mix.
Fill prepared muffin cups 2/3 of the way full. Bake at 400 degrees for 18 to 22 minutes or until light brown. Let cool in pan for one minute; remove from pan to finish cooling.
Soy protein powder may substitute for a small part of the flour to boost the amount of protein in each muffin.

SO HOW'D IT GO?

I used 1 tablespoon of flaxmeal as I didn't ve any applesauce. The muffins certainly taste good but they're too sweet for my palate. I used 1/2 cup of cranberry and added sunflower and pumpkin seeds.

I also used 3T of applesauce as an egg replacer. I added a handful of sunflower seeds and a scoop full of strawberry-flavored Spirutein. I think that gave it some nice flavor as well as a bit of protein. Yummy!

Mmmmmmmm, these are very good, they were not to sweet which I liked.  I used walnuts and added two tablespoons of flax seed meal to my flour. I also baked them in my mini muffin pan and they just look so darn cute  :>  Very good.  Thanks for sharing.

I used apple sauce as an egg substitute and also replaced half of the cranberries with sultanas and it turned out to be a really good combination.  :)>>>

i thought that these were yummy!  i left out the oil and they still turned out good.  I also thought that they werent super sweet, but thats a good thing to me, this is a good breakfast muffin.  I put some agave nectar on them and they were just perfect!

I made a few adjustments to these and they turned out really tasty.  Based on the reviews that said the muffins lacked flavor, I added some grapefruit zest, a squeeze of the juice, and a splash of apple cider.  Despite being a bit dense, they turned out great.

I made this recipe for my husband and I yesterday. I'm not good at figuring out how much a recipe is going to make. I should have cut this one in half for just the two of us. It made 12 muffins. I used raisins and almonds because that's what I had on hand. I thought the consistency of the muffins was perfect. I agree w/the post that they were a little bland tasting. I usually like my muffins a little sweeter. Maybe I'll add more sweetener next time.

Hmm...I made these muffins using the suggestion you had on how to make oatmeal flour. They didn't turn out too great. They're kind of grainy, and have absolutely no taste except for that of the cranberry. I mean, if you just took a bite that was sans cranberry, it would taste like nothing. Otherwise though, they're lovely!
