Oatmeal Chocolate Chip Cookies

What you need:

1 cup non-hydrogenated "margarine" (Earthbalance)
1 cup brown sugar
1 cup white sugar
1 teaspoon vanilla
2 egg equivalent of egg substitute (Ener-G Egg Replacer)
1 2/3 cup flour
1 teaspoon baking soda
1 teaspoon sea salt
3 cup oatmeal
1/2 - 1 bag chocolate chips (Tropical Source are my favorite)

What you do:

Cream "margarine" and brown sugar. Add white sugar, vanilla and egg replacer. In a separate bowl: mix flour, baking soda, salt. Mix the two bowls together. Add oatmeal and chocolate chips.
These are not flat little cookies. I make mine about 1" thick.

This recipe was delicious, but was definitely a little dry, couldn't add all of the oatmeal.... want to try this again!  Any suggestions?!

Mine were dry as well so I just added a splash of soymilk and it moisten the dough. Turned out very yummy!
