No Juevos in the burrito!

What you need: 

1 tablespoon organic olive oil
2 medium organic potatoes, diced small
1 teaspoon Italian seasoning
salt and pepper, to taste
1/4 pound tofu (I use organic)
2 teaspoons turmeric
2 teaspoons chili powder
2 tablespoons salsa (I use organic Sprouts brand)
2 organic tortillas
sprinkles of vegan cheddar (I use Daiya)

What you do: 

1. In medium sauce pan, heat oil. When ready, add diced potatoes. Season with salt, pepper and italian seasoning. Cook until tender.
2. In small pan over medium heat, cook tofu. Add turmeric and chili powder. Cook for 2 minutes to let flavors settle. Add salsa and set heat to low, cover for 2 minutes.
3. Add vegan cheddar. Cover and remove from heat. Over warm stovetop, heat tortillas.
4. Add tofu mixture to potatoes, stir to mix seasonings. Add 1/2 of the mixture to one tortilla. Enjoy!

SO HOW'D IT GO?

Add only 1 tsp of tumeric! I found the flavor to be somewhat bitter, due to the high amount called for in the recipe. Other than that, this was an acceptable tofu scramble

D'oh! It is actually spelled 'Huevos' :D But awesome recipe, I will have to give it a try. I bet you could freeze these too just like the ones you can buy in the store and microwave for a quick meal!

Oh boy!!  You would think with all the Mexican food I eat and living in Dallas so long I would know this by now!!  Thanks!!  I have not tried to freeze them yet...let me know if you do and if it works!!
