on the go microwave breakfast burritos!!!

What you need: 

1 bell pepper, chopped
1/2-1 whole onion, chopped
2 cloves garlic, chopped
olive oil
1 package (14 ounces) vegan breakfast sausage (I use Light Life Gimme Lean)
1 package (28 ounces) frozen potatoes o'brien
1 packet (1.25 ounce) taco seasoning
8 burrito sized flour tortillas (I use whole wheat)
1 package (8 ounces) vegan cheese slices

What you do: 

1. You will need two pans, one very large. In the big pan, saute the vegetables in olive oil. In the other pan, brown the sausage, breaking it up as needed. Once the veggies get soft (but not mushy), add the o'brien potatoes and taco packet to the large pan. Stir as best as possible.
2. Once the sausage is all in little chunks and browned, add it to the big pan as well. This is about when your "big" pan starts seeming very small. More careful stirring until taste tests confirm that your potatoes are no longer frozen.
3. Heat up your tortillas in the microwave. In each one, put 1 to 1 1/2 peices of cheese, and approximately 1/8 of the mixture. If 1/8 of the mixture seems like too much, thats ok, put as much as will safely close inside the burrito.
4. Once you have closed it, wrap it tightly with saran wrap. Do this for each burrito, you should end up with 8. Freeze your burritos at least overnight.
Any time you are dashing off in the morning with no time to cook, just grab a frozen breakfast burrito and microwave it for 2-3 minutes! You can peel back the saran wrap a little and eat it just like that, even in the car! WOOOOOO!
