No Fat Oatmeal Banana Cookies

What you need:

3/4 cup whole wheat flour
3/4 cup all purpose flour
1/2 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon allspice
1 teaspoon cinnamon
3/4 cup unsweetened applesauce
1/2 cup organic sugar
1/4 cup brown sugar
1 tablespoon ground flax seed + 3 tablespoons water
1 cup mashed banana (about 2 bananas)
1 3/4 cups quick oats
1/2 cup walnuts, optional

What you do:

1. Preheat oven to 400 degrees Fahrenheit. Grease a cookie sheet. Combine flours, baking soda, salt, allspice, and cinnamon in a small bowl. Set aside. Blend together applesauce and sugars. Add flax egg, and stir well.
2. Add mashed banana; mix well. Slowly pour some of dry flour mixture into the wet ingredients. Stir well after each addition. Once it is all added and combined well, add oats. Stir well.
3. Drop by small spoonful onto prepared cookie sheet. Flatten down some with the back of a wet spoon. If you wet it frequently, it will not stick to the cookie dough. Bake for 12 minutes. Remove to cooling rack immediately.

SO HOW'D IT GO?

Followed the recipe exactly... turned out really great!  No one could believe that they had no fat!!!  Cookies taste almost like banana bread, very moist.
Would have probably been good with the nuts, too!  Will definitely be making these again!  :)>>>
