Neiman Marcus Chocolate Chip Cookies for Vegans
1/2 cup vegetable oil 1 cup brown sugar 1/2 cup granulated sugar 1/4 cup applesauce 2 teaspoons vanilla extract, optional 1 3/4 cups flour 1/2 teaspoon baking soda 1/2 teaspoon baking powder 1/2 teaspoon salt 1 1/2 cups semi-sweet vegan chocolate chips
1. Preheat oven to 300 degrees F. Grease a cookie sheet. Cream the oil with the sugars. Beat in the applesauce and the vanilla extract, if using. 2. In a mixing bowl, sift together the dry ingredients and beat into the applesauce mixture. Stir in the chocolate chips. 3. Using a 1 ounce scoop or a 2 tablespoon measure, drop cookie dough onto prepared cookie sheet about 3" apart. Gently press down on the dough with the back of a spoon to spread out into a 2" circle. 4. Bake for about 15-20 minutes or until nicely browned around the edges. Bake a little longer for a crispier cookie. Source of recipe: I modified the famous Neiman Marcus chocolate chip cookie recipe to make it suitable for vegans. People tell me these are better than the original.
SO HOW'D IT GO?
Very good, but be careful to beat the oil and sugars together for several minutes. This step is essential in making the recipe come out well. I let my mixer run for around 3 minutes with oil and sugar, and three more minutes after adding applesauce and vanilla. I added a cup of toasted chopped pecans and decreased the chocolate chips to 1 cup. I also added a little almond flavoring because I like the way it tastes in chocolate chip cookies! Will definitely make these again!
