Mystery Vegan Cake

What you need: 

2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon cloves
1/2 teaspoon ginger
1/2 teaspoon nutmeg
1/2 teaspoon salt
1 cup sugar
2 tablespoons vegan margarine, room temperature
1 (10.75-ounce) can condensed tomato soup
1 cup raisins or nuts of your choice (optional)

What you do: 

1. In a bowl, sift together the flour, baking soda, and spices (cinnamon, cloves, ginger, nutmeg, and salt).
2. In a separate bowl, cream the sugar and margarine.
3. Once mixture is creamed, alternate adding flour mixture and tomato soup in 3 parts. Stir batter smooth after each addition. Fold in nuts or raisins
4. Bake in a greased loaf pan (8"x4") at 350 degrees F for 45 to 50 minutes, or until toothpick inserted in center comes out clean. Frost when cool, if you like.
I made this for a Memorial Day potluck and I had little old ladies asking me for the recipe for "that moist spice cake" !
