My Mom's Nut Rice Loaf

What you need: 

1/3 cup chopped celery
1/3 cup chopped green pepper
1/2 cup walnuts
1/2 cup cashews
1/2 cup almonds (blanched)
1 3/4 cup cooked rice
1 1/2 cup grated soy cheese
1 tablespoon sage
1/2 tablespoon thyme
1 tablespoon basil
1/2 tablespoon salt
1 tablespoon black pepper
1 1/2 cups tomato sauce

What you do: 

Cook rice in rice cooker.
Prepare the veggies (they should be chopped into the teeniest of dices).
Heat oven to 350.
Grind nuts together. Combine nuts and rice. Add 1 cup soy cheese. Add spices and vegetables, then 1/2 cup sauce. Mix well.
Place in well oiled loaf pan, cover with foil and bake for 50 minutes. Uncover, top with sauce and remaining soy cheese and bake for 10 more minutes.
You can triple this recipe and bake in a casserole dish, also.

SO HOW'D IT GO?

I made this for dinner last night, it was GREAT! I added a half cup of diced carrots, and served it with corn and glazed carrots, yum! The loaf didn't hold together as I had anticipated. But it was delicious. Thanks for this recipe.  :)

Kudos to you and your mom.  It was delicious.  I didn't have almonds, and I don't like to use Cashews, so I used walnuts and Brazil nuts instead, which worked well.  Thanks for giving me a recipe that will help use up the two shakers full of sage I have in my cupboard.
