Mushroom and Cabbage Saute

What you need: 

1 tablespoon olive oil
1 tablespoon minced Garlic (about 3 cloves)
8 oz. fresh mushrooms, chopped (any kind you prefer)
4 cups Nappa cabbage, chopped (about 1 medium head)
1/4 cup water
1 teaspoon Braggs (or tamari)
2 plum tomatoes, chopped
salt and pepper

What you do: 

Heat olive oil on medium in a large sauce pan. Add garlic and saute until lightly brown. Add mushrooms and saute for 5 minutes, stirring well.
Add cabbage and saute for 5 more minutes, stirring very well. Add water, Braggs, salt and pepper to taste and cook 5 minutes. Add tomatoes and cook 5 more minutes.
Once tomatoes are cooked to your liking, serve immediately with a slotted spoon.

SO HOW'D IT GO?

This recipe was fabulous even though I modified it a bit.  I sauteed cabbage, onion, and garlic and omitted the tomatoes and Braggs.  Although braggs would be tasty in there too.  I also tried for the first time "Soy Garden" natural spread in place of the olive oil.  It was delicious and tasted just like butter (its completely vegan.)  Season with S&P and you have a great side dish!!!  Thanks for the recipe idea!
