Mouth Watering Broccoli Casserole

What you need: 

2 packages frozen broccoli or 2 to 3 crowns fresh broccoli
1 can vegan cream of mushroom soup
1-1/4 cups dry dressing mix (my favorite is herb flavored)
1 cup grated cheddar cheeze (use what you like most)
1 medium yellow onion, chopped
1/2 cup vegan mayonnaise (e.g., Soynaise or Vegenaise)
2 egg equivalents, prepared (optional - not necessary, but helps to bind the casserole)
1/2 teaspoon salt
1/2 teaspoon pepper
3 tablespoons vegan margarine (I use Earth Balance)

What you do: 

1. Cook broccoli according to directions (if frozen) or until tender (if fresh). Drain and chop into bite size pieces. Let cool slightly.
2. In a separate bowl combine soup, 1 cup dressing mix, vegan cheese, onion, mayonnaise, egg replacer, salt, and pepper. Toss in broccoli until well mixed.
3. Pour into a greased baking dish and top with 1/4 cup dressing mix. Dot the top of the dressing with the margarine.
4. Bake at 350 degrees F for 25-30 minutes.
