Monas Chewy Good n Gooey Pecan Brownies

What you need:

2 cups unbleached flour
1 cup sugar
1 cup brown sugar
1/2 cup vegan cocoa
1 teaspoon baking powder
1 cup chocolate soy milk
3/4 cup vegetable oil
1 teaspoon vanilla extract
1/2 cup chopped pecans, more or less! (optional)

What you do:

1. Pre-heat oven to 350, and pop in your pecans (or other nuts) before you chop em. Theyll get roasty and smell good, and be better for the brownies.
2. Mix flour, sugar, cocoa, baking powder, salt in one bowl.
3. Add milk, oil, vanilla extract.
4. Chop up nuts (food processor) and stir them in as well. Mix it all up well! Youll get a consistency that's suspiciously like frosting. But that's good!
5. Grease and flour (or cocoa) a 9X13 inch pan. Pour your mix in there.
6. Bake for 25-30 mins. Theyre done when the top is kind of firm.
7. You should really let em cool for 10-20 mins before cutting into them because they're SO gooey. But if you like em like that, dig in right away!

I have a kinda of dumb  :-[ question....For the cocoa used, is that like cocoa you put with milk to make hot cocoa or is it like baking cocoa? Does it matter which one is used?

Thanks for the help, I really want to make these!

did anyone use applesauce in place of the oil?

well...I was just about to give these a horrible review...they were cakey, not very chocolatey...and then I realized that being the genius that I am, I forgot the entire cup of brown sugar.  So considering the mess up on my part...they actually turned out pretty ok..still edible, like dry chocolate cake.

This was actually the first vegan dessert I've ever made. They came out absolutely perfect!!! I fed them to all of my non-vegan family/friends, and everyone enjoyed them. I'll be making these quite often. Thanks  :D

This is our new favorite brownie recipe. We did make a few changes, similar to those mentioned already...

Cooking time - I leave these in for about 40 or 45 minutes. They come out pretty cakey for me - not really gooey, but amazingly tastey.
Sugar - I use turbinado (2 cups - they do come out pretty sweet).
Soy milk - I use plain soymilk, not chocolate.

Try adding semi-sweet chocolate chips!

Fantastic recipe!

Perfect! I excluded the pecans & added a bit of water that was boiled with flaxseed, & this is like a moist, good chocolate cake! Next time I'll add chocolate chips for a rich, fudgy flavor.

great recipe  :), made these on Sunday and my family loved them. I used macadamia and plain soy milk, but they still tasted wonderfully. Totally recommend them for all you brownie lovers out there! :D

these are awesome! i used walnuts cos i didn't have any pecans but apart from that i followed the recipe exactly and they were great, although i did have to cook them a bit longer. this is the best, and by far the simplest vegan brownie recipe i've found so far.

These were tasty, but not so chewy or gooey. I followed the recipe exactly, and they turned out quite crumbly. Great flavor and texture, but they wouldn't quite stay together like you want a brownie to. I took them to a barbecue, though, and nobody complained. :)
