Microwave Vegie Biryani

What you need: 

1 cup basmati rice
1/2 cup peas
1/2 cup corn
1/2 medium carrot, chopped
1/2 red capsicum, chopped
600ml (20 fl oz) vegetable stock
1-2 tablespoon curry paste (any kind)
handful roasted cashews (optional)
fresh coriander (cilantro) leaves, chopped (optional)

What you do: 

In a microwave safe dish, combine uncooked rice, peas, corn, carrot and capsicum.
Heat veg stock to a gentle simmer, then stir in the curry paste.
Add to rice mixture, cover with cling wrap and cook in the microwave for 12 minutes on high.
Remove from microwave and allow to sit for 5 minutes. Stir in cashews and coriander leaves and serve with pappadums.

SO HOW'D IT GO?

Very good and easy to make! I already had some basmati rice cooked so that did not factor in cook time. I am not a huge curry lover so the two teaspoons was just enough for my taste. I did add a little smoked paprika and sea salt to even out the veggies. Great for leftovers or small late night meal.

So, I really enjoyed this recipe. However, I encountered a few snags:

1, I used brown basmati rice, and I'm not sure if that's why, but this took me 30 minutes to fully cook, not 12.
2, the flavor was really limited. I ended up adding way more than 2 tablespoons of curry paste, too. Next time, I'm going to play around with spices.

Other than that, the changes I made were in the veggies: I used green beans, corn, a small handful of sweet peas, and diced canned tomatoes. They were all canned, drained and rinsed. Not bad, but I may change up the veggies next time.

Overall, I love this and the potential it has.
