Mexican Pizza

What you need: 

1 teaspoon cumin
1 teaspoon galic powder
1 teaspoon chili powder
1 (16 ounce) jar salsa, divided
2 (15 ounce) cans black beans, processed until smooth
pizza dough for 1 pizza (I use easy, yummy and quick pizza crust: http://vegweb.com/index.php?topic=5701.0)
1 1/2 cups vegan cheese (I use Daiya)
3 cloves garlic, chopped finely
1 small onion, chopped finely
2 jalapeños, sliced thinly
2 stalks chives, chopped
1/2 cup frozen corn, thawed
1 chinese eggplant, sliced thinly, optional

What you do: 

1. Preheat oven to 400 degrees F. Mix seasoning and 4 tablespoons salsa into processed black beans.
2. Spread black bean mix on dough, sprinkle sparse layer cheese, sprinkle veggies, addtional salsa for sauce, top with remaining cheese.
3. Bake for 15-20 minutes, or until cheese has reached desired consistency.
Source of recipe: Better Homes and Garden One Dish Meals. This was not a vegan recipe but adpated very well, so I thought I would share.
