Mexican Chilaquiles

What you need: 

vegetable oil, for frying
2 dozen corn tortillas, torn into fourths
1 (14.5-ounce) can diced tomatoes
1 or 2 jalapeno peppers
1/4 cup chopped onions
1/2 tablespoon mined garlic
salt, to taste
4 green onions (optional), sliced
shredded lettuce
vegan sour cream

What you do: 

1. To a wide skillet heat, add enough oil to cover the bottom of the pan. Heat oil, then add tortilla pieces and fry; turning and mixing as needed until they are crisp tortillas chips. Add more oil as needed, but when the tortillas are done frying, there shouldn't be a lot of oil on the bottom of the pan.
2. Salsa: To a blender, add the tomato, jalapenos, onion, garlic and salt. Pulse about 10 times to get a the consistency of a salsa.
3. Lower the heat for the skillet and add the salsa. Mix until all the chips are covered. And there you have it. Chilaquiles!
4. Sprinkle green onion slices and serve on a bed of shredded lettuce and top with vegan sour cream.
A very easy and affordable meal.
