Mallory's Sammy

What you need: 

1 onion bagel
vegan cream cheese
mustard (your favorite, I prefer the chunkiest kind I can get)
1/2 an avocado
red onion, sliced
1 slice vegan soy cheese (I use the pepper jack kind)
2 slices vegan sandwich "meat"
sliced tomato
salt and pepper

What you do: 

This is my favorite made up sandwich. It varies from time to time, but mostly the ingredients are the same. Feel free to add whatever you think would make it better!
Cut onion bagel in half. On one half spread vegan cream cheese then the mustard. Cut 1 avocado in half. Remove the pit and slice into small chunks. (I just keep the avocado in the skin and cube it using a paring knife) Spread the cubed avocado until its a creamy paste on the other side of the bagel. Add salt & pepper to taste. Cut the red onion into thin slices, as much as you prefer. I use at least a couple slices since I love onions. You can use more or less. Add your "meat & cheese" lettuce & tomato. Put both halves together and enjoy!
