Luscious Coconut Bread

What you need: 

1 cup unsweetened coconut
2 cups unbleached flour
1 tablespoon baking powder
1/2 teaspoon salt
1 cup nondairy milk (I use soy)
1 1/2 teaspoons Ener-G Egg Replacer + 2 tablespoons water
2 tablespoons canola oil
2 tablespoons unsweetened applesauce
3/4 cup sugar
1 teaspoon vanilla

What you do: 

1. Preheat the oven to 350 degrees Fahrenheit. Toast the coconut in a dry skillet on medium heat until it begins to brown. Stir a few times, to brown evenly and prevent burning. Keep a close eye on the toasting coconut because it'll burn quickly after it begins to brown. Immediately remove from heat when it browns. Lightly grease a bread pan.
2. In a bowl, combine the dry ingredients, including toasted coconut. In a separate bowl, mix together the wet ingredients. Add wet ingredients to dry ingredients, and stir until blended.
3. Pour into prepared bread pan, and bake until a toothpick comes out clean and loaf is lightly browned (about 45 minutes). Remove from pan and cool on a wire rack.

I just made this and I really liked it. I turned it into muffins and added a tbsp of lemon juice, a quarter cup of toasted ground almond, 1/2 tsp of almond extract, and a handful of dried cranberries. It was really tasty but I think I'll make it without the cranberries next time. Great recipe :)


What a wonderful recipe, thanks! I did modify it a bit after reading some other folks' comments and based on other things I have made, but the core recipe is what lit the fire that got it started... I split the flour between whole wheat and white, had a heaping 1 c. of coconut, instead of 1Tbsp baking soda I used 2 tsp baking soda + 1 tsp baking powder, I added 1 tsp of apple cider vinegar to the soy milk to curdle it and to give some acid to help in rising, I used 1/4 c. oil and no applesauce, reduced the sugar to 1/2 c. , added 1/2 c. finely chopped almonds, toasted, and added 1/2 tsp. almond extract. I sprinkled a little toasted coconut, toasted almonds on top, and then a very light dusting of white sugar. Also, I used a glass loaf pan so I decreased the temperature to 325 and baked for approx. 50 minutes., and then set the oven to broil for 1 minutes to crisp up the topping a little bit.

So, it seems like a lot of changes, but not really. Just a little here and there, and a great result, thanks!

Don't know why I haven't reviewed this recipe yet, because it's fantastic! I reduced the sugar to 2/3 cup, which made it good as breakfast muffins. I also used 1/2 full fat coconut milk and 1/2 non-dairy milk, because I LOVE coconut!


this recipe just didn't live up to the hype for me. i tried making it twice with slightly different variations. it was good, just not amazing.


THIS IS AMAZING! I used 1 cup whole wheat flour and 1 cup unbleached. i also used half a banana instead of enr-g egg replacer and i crushed hazelnuts and put them at the bottom and on top. too good to be true!


I used half almond milk and half coconut juice instead of soy milk and added some almond extract and sprinkled a tablespoon of coconut on top. I didn't toast the coconut and it still came out delicious.


Okay, I've been making this delicious bread for a long time, when I finally realized that the best part was the crunchy outside pieces. So, I decided to make muffins--FANTASTIC IDEA. I also decided to use coconut milk in this recipe for the first time, however, I realized I used up the last of my coconut milk making faux Bailey's Irish Cream--no problem! I used the Bailey's as the "milk," added some chopped almonds, used a tiny bit of both coconut and almond extracts (in addition to vanilla), and these are the most delicious things I've ever put in my mouth! Try the fake Bailey's idea! Yummy!


I made this recipe in a bundt pan and, not having any powdered egg replacer, I used plain soy yogurt instead. I think the change managed to make it even more luscious and mouth watering!

This recipe is amazing, but, be warned: once you start eating it, it's nearly impossible to restrain yourself from eating the whole thing!


wow great recipe! thanks for sharing! i modified the recipe because i didn't have some of the ingredients: instead of 2C of flour I did 1C wheat & 1C oatmeal, no oil or "egg" just added more applesauce... forgot to put water but it turned out soo yummy. everyone whom i shared it with really enjoyed it! thanks again!  ;)b
