Low Gluten Super Yummy Banana Breadish

What you need: 

1 cup oat flour (not gluten free but low gluten)
1/2 cup tapioca flour
1 cup white rice flour
3 1/2 teaspoons baking powder
pinch baking soda
1 teaspoon cinnamon
1/2 teaspoon allspice
1/2 teaspoon nutmeg
1 teaspoon salt
1 cup of natural sugar
2 mashed bannana's
1 tablespoon cider vinegar
3 tablespoons oil
1/4 cup soy or coconut milk
1/4 cup h2o+ 2 tablespoons of flax (for egg)

What you do: 

Combine the flours, leavening agents and spices and set aside.
Combine mashed banana and sugar kind of cream it together. Add flax and water combo, soy milk, oil and mix.
Mix together with the dry ingredients.
Pour into a square baking dish (I don't think it would turn out well as a loaf but please try it, who knows) and stick into an oven that has been preheated to 350 and bake for about 20 minutes but check on it.
I just made up the recipe now so the time isn't exact and I only went low-gluten because there was no other flour in the house and I had already mixed the wet ingredients together and I am to lazy to ride down to the shops. So yes it will work well with normal flour but I thought it was cool that it turned out well going the no gluten route. Cheers!

SO HOW'D IT GO?

Lovely banana cake that rose splendidly.  I will definitely make this again, but next time I'll use 1/2 the sugar as it is VERY sweet!
