Lentil Patties
400 grams brown dried lentils
2 medium sized onions
4 large cloves garlic
4 tablespoons fresh grated ginger
Cayenne to taste
Cumin seeds, to taste
Yellow curry, to taste
Chili powder, to taste
Juice of one half lemon
1/4 cup flour
1 tablespoon baking powder
Olive oil, for frying
1) Prepare dry lentils by placing in a pot of boiling water and cooking for 25 minutes. Once tender, drain and cool.
2) Saute garlic, onions, ginger, lemon juice and spices in a skillet. Add lentils and stir to combine. Add flour and baking powder and mix to form a soft dough.
3) Take the lentil mixture and form it into small patties (about 2 centimeters) and fry in olive oil at medium heat until browned. Flip and repeat. Drain on paper towel.
I serve these with plain whipped soygurt.
