Lentil Dahl

What you need: 

1 onion, finely chopped
1 tablespoon (15 g) vegan margarine (I use Vitalite)
1-1/3 cup (250 g) split red lentils or toor dal
1 garlic clove, minced
1 teaspoon cumin
1 teaspoon salt
1 teaspoon turmeric
1/2 teaspoon chili powder, or more to taste
3 cups (750 ml) water
1.8 ounces (50 g) creamed coconut

What you do: 

1. Fry the onion in margarine for 10 minutes until soft and lightly browned.
2. Add lentils, garlic, cumin, salt, turmeric, and chili; stir for 2 to 3 minutes.
3. Add the water, bring to the boil, and simmer gently for 25-30mins, until the lentils are tender.
4. Add the creamed coconut and stir over the heat until dissolved.
5. Check seasoning and serve with rice.
This is a REALLY simple recipe, it's really easy to make too and tastes amazing!
I also made this using toor dal which are different kind of lentil, they should be available in the Indian food section in most supermarkets.

SO HOW'D IT GO?

Supper fast and easy recipe.  I love the creaminess of this dish. I added some cayenne pepper to this dish to give it a little kick and I think next time i make it i want to add some cauliflower to it.  I think that cauliflower would go well with the creaminess of this dish.

This is a super fast and incredibly delicious meal.  I, too, subbed 1 1/2 cups broth with one can of coconut milk and it came out great.  I was rummaging through the pantry trying to decide what to make for dinner and literally had nothing in the house.  I only had some black lentils and some French lentils, but regardless of the color -- this was so good!  I had a few leftover baked potatoes in the fridge that I peeled, cubed, and added and my  husband kept asking me if this was something I worked on all day because it was so good.  If he only knew that this took just a few minutes to throw together.  Excellent recipe and I will definitely make it again and again.

I made this for the first time today and I loved it. I used coconut milk instead as well as veggie broth instead of water. Turned out wonderful and I'll definitely be making this on a regular basis. :)

I made this today and it was fantastic...
Few changes though...
Instead of water and creamed coconut I added 1 1/2 cups water and 1 1/2 cups coconut milk and a handful of shredded coconut. I was out of cumin..so I added Baharat instead.............POETRY....
