Lemon Tea Cookies
Cookies:
3 tablespoons water
1 tablespoon flax seeds
1/2 cup nondairy milk
2 teaspoons lemon juice
1 3/4 cups flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup nondairy margarine
3/4 cup sugar, to preference
1 teaspoon grated lemon rind Lemon Glaze:
3/4 cup sugar
1/4 cup lemon juice
1. Preheat oven to 350 degrees F. For flax mixture: In a cup, stir together water and flax seeds; set aside. For buttermilk: In another cup, stir together nondairy milk and lemon juice; set aside.
2. In a bowl, combine flour, baking powder, baking soda, and salt. In a separate bowl, beat nondairy margarine for 30 seconds, then add sugar and beat until fluffy.
3. Add flax mixture and lemon rind; beat well. Alternate stirring the dry ingredients and soured milk into the wet ingredients.
4. Drop from a teaspoon onto an ungreased cookie sheet. Bake for 12 to 14 minutes. Remove at once onto a wire rack. While baking, mix together the lemon glaze to be brushed on the cookies while cooling.

These certainly were as fantastic as everyone made them out to be.
I went to have another piece, and found half of the batch had been eaten by family and friends. Heck yes!
I did add a bit of soy butter to the glaze, which curdled of course, but all was well.
Anyway, make these if you haven't.
These cookies are amazing. Even though other reviewers had mentioned it, I really couldn't believe how light these cookies turned out. My icing turned out watery which was probably due to the fact that I didn't follow the recipe (oops!). I didn't add enough sugar, but I liked the tartness of the flavor.
These cookies were so AMAZING !!! :)>>> But I do not know how u were able to get 48 cookies out of the batter ??? I made each cookie out of 1 tb of batter and I was only able to get 16 cookies out of the batter?? :'(
These cookies are so light and fluffy and so darn pretty to look at.
I used whole wheat flour they are so yummy. :P

I made at the last minute to bring somewhere, and I didn't have a lot on hand - otherwise I would definitely have made cupcakes from VCTOTW - so I added a lemon frosting (1/4 cup shortening, almost 2 cups powdered sugar, juice of 1 lemon, 1/2 teaspoon lemon extract, 2 TBS zest) on top to make them feel more like cupcakes.
Mine are not very cute, but they're definitely delicious.
(Man, I really wish there were a way to make cookies with an oil that's liquid at room temperature and have the texture turn out right. But then I'd probably just eat more cookies.)
HELLO!!!!!!! They are fantastic.Although a little sugery. I cant eat just one so I made bars instead , so I would nt feel like such a pig. It didnt help, wind up eating half of the dish between roomie n me. Definitley will make again. Love them<3 :hotforyou:
OMG! This recipe rocks!!! ;)b I made them yesterday evening for a basketball game... some beer to wash it down! All my non-veg friends enhaled the cookies before I could put them on the rack to cool... 1 change I made was 2 tablessppon of batters to make 1 cookie... I like my cookies Bigalicious... Keep up the good work in creating amazing recipes.
Wow. Wow. These cookies are amazing. I used blood orange instead of lemon and the glaze was a beautiful bright pink. They were pretty easy too. These are a definite keeper.
I made these today and they did NOT turn out how I'd expected. I followed the recipe, but man. when I made them before, they were pretty good, nice and sweet and simple, but the flax did something weird. I still thought they were good though, and so did other people.
but this time, they didn't puff up as much, weren't as sweet, and hence, the flaxseed-y-ness is a little overwhelming. their not awful - still pretty edible, and the hint of lemon is nice, but that FLAXSEED! it shows up in little bits and taints the lemon flavour. I'm wondering, because I assume the flax is used as an egg replacer, could I just use something like ener-g?
the batch only made 33 cookies, a lot less than before. weird.
grr. I'm a little disappointed. I love lemon. I really liked these cookies before. I think the next time I make them, and I think I'll make them again soon, I'll use something other than flax. that might make a difference.
I just calculated the nutritional info for this recipe (I'm bored right now). if the batch makes 48 cookies, there are approx 36 calories, 1 g fat, scant fiber, 6 g carbs, and 1 g protein. just thought I'd let ya'll know.
