Katie's Broccoli Salad

What you need: 

1 head broccoli florets (larger pieces cut into bite size pieces)
1/2 cup raisins
1/4 cup red onions (best to use red onions)
Baco's or any faux bacon product (if using slices, crumble)
3 tablespoons white wine vinegar
2 tablespoons cane sugar
1 cup vegan mayonnaise (Vegenaise works best)
1 cup sunflower seeds, toasted

What you do: 

If using vegan bacon slices, prepare them now and then, drain and crumble.
In a large mixing bowl, combine the broccoli florets, onion and raisins.
In a medium size bowl combine the vegan mayonnaise, white wine vinegar and the cane sugar.
Mix well and pour over the broccoli mixture, toss until well coated. Refrigerate for 2 or more hours.
Before you serve, toss with the vegan bacon or Baco's and sunflower seeds.

SO HOW'D IT GO?

I made this for a potluck and got rave reviews.  I left out the bacos and swapped the sunflower seeds for cashews.  At one point I thought there was gonna be a fork fight over the leftovers!  Awesome!

Thank you Chelseamae..I adapted this from a nonvegan one for my daughter and her husband and they absolutely loved it..I can't believe you found it because it didn't go in the regular salads like I wanted it to..I don't usually look under misc..salads..glad you liked it.

Love this! My mom used to always have a similar salad in the fridge growing up and I wanted to make it for a luncheon we had at work. Everyone LOVED it. They couldn't believe it was vegan haha, I added some rice shredded cheese and left out the sunflower seeds.
