Juicy Spinach and Poppy Salad

What you need: 

1 bag baby spinach
2 oranges, chopped
1 cup fresh mushrooms, thinly sliced
2 ripe avocados, chopped
1/2 of a red onion, thinly sliced
1/3 cup olive oil
1/3 cup freshly squeezed lemon juice
2 tablespoon sugar
1 teaspoon ground mustard
1 teaspoon salt
1 tablespoon poppy seeds
1 teaspoon grated lemon rind

What you do: 

Place all salad ingredients into a large bowl, then mix up the dressing. It's easiest to put all the dressing ingredients into a small jar or container with tight-fitting lid and then shake for a min. or so to mix thoroughly.
Just before serving, pour dressing over salad and savour!
I love spinach salads and this is the best one I've come across. It always gets devoured.

I liked this one. The salad was a meal in itself while the dressing was heavy. I'm notsure what the poppy seeds do nutritionally but they add texture.
