Italian Veggie Casserole

What you need: 

1 medium zucchini
1 medium onion
2 cloves of finely chopped garlic
1 rounded teaspoon basil
2 rounded teaspoon parsley
1 package rotini pasta
1 28 oz. can diced tomatoes
bread crumbs
follow your heart brand soy mozzarella-style cheese (grated)
salt and pepper to taste (if desired)

What you do: 

Slice zucchini into coins and chop onion however you'd like. Put water on to boil.
Add pasta to boiling water and cook for 10 minutes.
Saute herbs, zucchini, onion, and garlic in olive oil in a large saute pan. Cook until zucchini is slightly browned and onions are translucent.
Drain pasta in a colander, and place in a 9" x 13" baking dish. Pour veggies and diced tomatoes on top. Mix well.
Preheat oven to broil.
Sprinkle soy cheese over pasta/veggie mixture. Sprinkle bread crumbs on top.
Broil 10 to 15 minutes or until bread crumbs are browned and "cheese" is melted.

SO HOW'D IT GO?

This recipe worked great!
At first I was a little hesitant because the list of ingredients didn't seem like much...
But one night when I was in a pinch, I discovered I had everything on hand and went for it...
I was pleasantly surprised because it was quick, made a ton and was very tasty!!!!
Thank you for sharing this recipe, I will definitely be making it again!
It had great flavor, I made it exactly as written and it worked great!

really simple and delicious. I added carrots, a tomato, and mushrooms. I used Toffuti mozzarella and soy parmesan. I wouldn't broil this for more than 5 minutes.

Hmmm. I tried this the other day and yum! As a vegetarian who is getting used to veganism now ( a little hard to give up cheese and to be frank all veggie cheese I've tried are just horrible!), I missed the regular cheese in this recipe :'(.

Next time I will try it with a veggie cheese, hopefully a decent tasting one that won't make me gag!

Otherwise this is one of my fave casseroles now! ;)b

I've made this a few times now & it's always a favorite.  I added squash & mushrooms to it...YUM!

This was reallllllllly good! I love spicy food, so I added a tablespoon of red chili flakes and an additional 2 cloves of garlic. Also, to make it more substantial veggie-wise, I added about a cup of chopped baby portobello mushrooms. This recipe was so incredibly easy, I'll definitely be making it again! ;)b

I loved the zucchini in this. Agree with other reviews that more zucchini would be nice. Very easy to make. My family wasn't very interested in it and I didn't want it to go bad, so I added spaghetti sauce to it and they ate it up. I liked it better with the sauce, too.

This came out really tasty.  I added vegan parmesan and Cholula to my serving.  I know the Cholula is weird but I'm pregnant so everything tastes good with it on it.  Although my sister in law, who is not pregnant liked the Cholula on it.  This recipe was very delicious and I will definitely be making this again. 

P.S.
I was really easy to make too.

Could use some more veggies.  I'll probably add some more zucchinis, maybe some eggplant or something next time.  Very good though :)  Definitely a great recipe to get rid of some extra veggies with :)

This is SO good.  I read other user reviews and used the suggestions of adding cheddar and mushrooms.  This will be added to the usual rotation!
