Irish Slow-Cooker Oatmeal (Overnight recipe)

What you need: 

6-1/2 cups water
2 cups steel cut oats
2 apples (I use granny smith), peeled, cored and diced
1/2 cup brown sugar (plus more for serving)
1 teaspoon cinnamon
1 teaspoon vanilla extract (optional)
1/2 cup toasted pecans, chopped (optional)
2 bananas, sliced (optional)
nondairy milk (optional)

What you do: 

1. In a slow cooker (Crock Pot, Smart-Pot, etc.), add and stir together water, oats, diced apple, brown sugar, cinnamon, and vanilla extract. Cook overnight on low setting for 8 to 9 hours.
2. In the morning, stir in the toasted pecans.
3. Serve warm topped with bananas and nondairy milk. Sprinkle with more brown sugar, if you like.

SO HOW'D IT GO?

this worked well for me. it smelled so wonderful walking into the kitchen when i woke up.  i normally cook my oatmeal in soy milk, so it was less flavorful than what i'm used to, but still good and great consistency.  i served it with maple syrup so it was plenty sweet.
