Instant Chili

What you need: 

1 14 oz can black beans
1 14 oz can diced tomatoes
1 soy sausage link (chipotle flavored if available) chopped up
1/3 cup diced green bell peppers
1/2 cup diced yellow onions
2-3 cloves of garlic
2-3 tablespoons of oil
2 teaspoons of seasoning (Mexican, cajun, creole, etc.,)
salt to taste

What you do: 

Heat the oil in the pan. Saute garlic, onion and bell peppers until it softens (about 2-3 min).
Throw in the chopped soy sausage and stir fry it till it browns (about 4-5 min).
Throw in the black beans, and mix it up. Add the seasonings and cook for 2-3 min. Add the diced tomatoes last. Lower the heat, cover and simmer for 5-10 min. Open and stir occasionally once or twice.
Serve with rice or salad.
