Indian Spinach and Potatoes

What you need: 

2 large potatoes, peeled and cubed into 1/2" pieces
1 head fresh spinach, chopped
2 pieces solid spicy curry
3 tablespoons olive oil
salt and pepper, to taste
pinch dried oregano

What you do: 

1. Boil potatoes. When done, set aside. In a large sauce pan, place olive oil and when hot, add spinach, and curry.
2. Cook for 10 minutes, and add salt, pepper and oregano to taste.
3. When spinach is soft, add potatoes. If it looks to dry, add a bit more oil. It should have a thick, yet moist consistancy.
Enjoy with rice and other Indian dishes.

SO HOW'D IT GO?

This came out pretty good, but I had to add a lot more spices to make it that way. The best part was that it was easy to make. I added some chili powder, cumin, turmeric and some red chili sauce. I also added peas.

the problem with making delicious dishes like this the night before for lunch  is that i end up eating a lot of it when I am not suppose to!! haha.. i love the combination of the spinach and potato in this recipe. i used curry powder, i also added garlic in the beginning, and added a bit of cumin, tumeric, ginger powder, and red chilli powder. I also added some seasame seed (which probably isn't very indian..) but it's so yummy! m mMMm can't wait for lunch tomorrow.  :)>>>

would this be considered a kind of palak paneer, except with potatoes instead of paneer cheese?

I added a little bit of fresh ginger... and some onion.

This is one of my family's favorite dishes.  It's so easy, too.  I always at least double the recipe to make sure we have enough for leftovers to take for lunch the next day.

I added carrots and peas to this recipe, which were a nice addition, but overall I found the recipe bland even with extra curry and added cumin.  It's definitely worth another try though, but I'll definitely be adding a whole lot more spices.

This tasted really good. I added a lot of curry and some cumin. I also added onions and peas. It was delicious.
