The "I dont want to make dinner" Temper Tantrum Dinner
3 - 15 ounce cans white beans, drained and rinsed
1 - 6 ounce can tomato paste (I use herb and spices flavor)
1 - 28 ounce can diced tomato (I use herb and spices flavor)
2 medium onions, chopped
4 cloves garlic, crushed
Olive oil, as needed
Fresh basil, as desired
1) In a large pan, saute garlic and onion in a little oil until soft.
2) Add remaining ingredients except for basil and simmer until everything is warm. Chop basil and add to mixture. Cook for a couple minutes and enjoy.
**I had a temper tantrum and didn't want to prepare anything for dinner the other night. So I threw this together really quickly. Next time I do it I am actually going to bake it for a bit with a good topping of vegan cheese!

Mmmmmmm, I made this tonight for dinner.
I made some miner changes (of course to account for what I had on hand). Instead of using canned tomatos I used a couple of fresh tomatos from the garden. I find that if I use those, I can't mess up, it is like anything I cook with my garden tomatos comes out awesome! I just cooked it a little longer until it cooked down to the consistency I wanted. I put it on a tortilla, with diaya cheese and lettuce. Ummmmmm, soooo good. And easy!

Last night I added celery to this when I did the onions and then added about 2c of broth when I added everything else and let it all simmer - then I used my hand blender and blended this up a bit to make a really yummy soup!
I am going to try it next week on my homemade "polenta" and bake it with cheese on top to make a caserole/lasagna-ish... let you know how it goes!
