Hummus of the Tropics

What you need: 

2 cups cooked chickpeas (garbanzo beans), mashed, cooking liquid reserved
1/2 cup tahini paste*
5 tablespoons coconut oil (melted/room temp.)
5 tablespoons lime juice
1 fresh hot chili pepper, diced (habanero, jalapeno etc..) or 1 tablespoon hot sauce of choice
1/3 cup green onion, chopped
3 cloves garlic, minced
1/2 teaspoon cumin
Salt and pepper to taste
3 packed tablespoons fresh cilantro, chopped (optional)

What you do: 

*You can make your own tahini paste in a food processor or blender by grinding sesame seeds to a paste. In a food processor or blender, blend the tahini, coconut oil and lime juice until emulsified and creamy white. Add the mashed chickpeas, hot chili pepper, green onions and garlic until smooth, adding a little of the reserved liquid if the mixture seems too thick; it will be slightly grainy. Season with salt, pepper and cumin. Mix in chopped cilantro and serve as a dip or sandwich spread.
