Hearty Cauli, Leek and Sweet Potato Soup

What you need: 

1 leek sliced (all of it!) into medium chunks
1/2 head of large cauli, or one medium chopped into florets
2 Kumara (sweet potato) cut into medium sized cubes
1 teaspoon extra-virgin olive oil
1 medium onion (chopped)
1/2 teaspoon sea salt
5 cups veggie stock
3 cloves garlic, minced

What you do: 

Heat a large pot over med. heat and add oil.
Add leek, onion and salt and saute for 5min when the onion should become see-through.
Add garlic and cook for 1min
Add kumara, cauli and veggie stock them bring to the boil.
Reduce heat and simmer for 20min.
Remove the soup from the heat, and blend until desired level of creaminess/chunkiness.
Transfer the soup back to the pot (if you've used a blender instead of an immersion stick) and warm over low until heated through.
Serve hot with grainy rolls or toast. Yum!
*You can reduce the veggie stock by one or two cups to make a yummy veggie mash. Also, you might want to add cumin, garam masala, curry powder, etc to give it a curry flavour.
