Hearty Breakfast Sweet Potatoes

What you need: 

1 large sweet potato, cubed, or 1/2 baking potato
2 tablespoons water
2 tablespoons olive oil
1/2 onion, chopped
1/2 to 1 can Cannelini beans, to taste
1/4 teaspoon paprika (I use Spanish smoked)
3 pinches onion salt
3 generous pinches hickory-smoked salt / hickory-flavored salt
red pepper flakes, to taste (I use restaurant packets)
parsley, chopped

What you do: 

1. Place sweet potato and water in a glass container. Cover and microwave for 2 to 3 minutes, or until tender.
2. In a pan, heat olive oil. Add and saute the onion for 2 to 3 minutes.
3. Stir in cooked potato and brown slightly. Add the beans and warm through. Add the spices (paprika, onion salt, hickory-smoked salt, and red pepper flakes.
4. Once the mixture is cooked and removed from the heat add the chopped parsley and serve. This has a hearty flavor with the smokey-ness from the paprika and smoked salt.
