Happy Salad

What you need: 

Vegan "chicken" patty, grilled or breaded (optional)
Baby spinach, as desired
Cucumber, as desired
1/4 cup chickpeas
1/4 cup corn
1/4 cup red bell pepper
Carrot, as desired
Onion, as desired
3 to 4 tablespoons fresh-squeezed grapefruit juice
Dill, as desired
Black pepper (optional)

What you do: 

1) If using, bake or microwave vegan "chicken" patty according to package directions.
2) Meanwhile, prepare a small skillet with cooking spray. Over medium-high heat, saute the chickpeas, corn, pepper, carrot, and onion for a few minutes or until heated through and crisp. Add the grapefruit juice, dill, and pepper. Saute for a minute or two more.
3) Cut the patty into strips and lay over a bed of baby spinach and fresh cucumber. Pour veggie mixture over the top. Enjoy!
Source of recipe: Made this as a post-workout lunch today. The grapefruit actually complements the dill quite well. And it was colorful and pretty!
