Grey Peas and Onions
1 pound grey peas
2 teaspoons salt
2 large onions, sliced thinly
oil, as needed for frying
salt and pepper, to taste
1. Soak peas in cold water overnight. Drain, cover with cold water and boil until almost cooked (about 40 minutes).
2. Add salt, and cook until done. Drain. Heat oil in pan.
3. Fry onions with salt and pepper until golden/brown. Serve peas with fried onions on top.
This won't work with green peas! You could however try yellow or split peas. This is originally served with fried bacon bits, so you could figure out something to substitute it.
We have a saying: the more grey peas you eat on Christmas and New Years Eve, the more money you will have the next year.
