Greek Orzo Salad

What you need: 

1 cup orzo pasta, cooked to package directions and chilled
1 cucumber, chopped
1 tomato, chopped
1/2 red onion, chopped
1 can garbanzo beans, drained and rinsed
1/3 cup red wine vinegar
3/4 teaspoon garlic powder
3/4 teaspoon dried oregano
3/4 teaspoon dried basil
1/2 teaspoon pepper
1/2 teaspoon salt
1/2 teaspoon onion powder
1/2 teaspoon dijon mustard
1/2 cup olive oil

What you do: 

1. In a bowl, combine orzo, cucumber, tomato, onion, and garbanzo.
2. In a small bowl, add red wine vinegar, garlic powder, oregano, basil, pepper, salt, onion powder and dijon mustard. Whisk while slowly stiring in the olive oil.
3. Pour the dressing over the orzo and mix to combine. You can further chill as needed.
**Helpful tip - in order to decrease the intensity of raw onion you can soak the chopped onion in water before adding it to the other ingredients. This will help so that the onion does not "lend" its flavor to all of the other ingredients...particularly helpful if you are making this in advance of serving time.**
Source of recipe: I used a Greek salad dressing recipe that I have used for a few years and mixed it with orzo and other veggies to make a great pasta salad...great for potlucks!
