Greek Couscous

What you need: 

1 cup couscous
Vegetable broth
1 small cucumber, chopped
1 small green pepper, chopped
1 small red onion, chopped
1 small tomato, chopped
1 - 14 ounce can chickpeas , rinsed and drained
1 - 14 ounce can cut beets, rinsed and drained
2 teaspoons garlic, minced
Salt and pepper, to taste

What you do: 

1) Prepare couscous in vegetable broth.
2) Once couscous is finished, mix with chopped vegetables, chick peas, beets, salt and pepper in a large bowl. Enjoy!
This recipe refrigerates well and is great cold!
You could add in other ingredients typical to a greek salad as well, but these are the ones I like on mine! Feel free to modify!
Source of recipe: I was playing around in the kitchen trying to modify a greek salad and this is what I came up with!
