German Style--Sweet Potato Pancakes!
1/2 large sweet potato, grated
1 smaller regular potato, grated
1/2 large onion, grated
1/4 cup Italian bread crumbs
1 egg substitute, prepared
1/4 cup chopped parsley
2 cloves garlic, smashed
1/2 tablespoon ground flax seed (optional)
1/2 tablespoon ground millet (optional)
1/2 teaspoon salt
oil to pan fry
1. Except for oil, put all ingredients in a bowl and mix. ( The addition of the flax seed and millet add a wonderful toastiness to the pancakes.)
2. Heat 2 tablespoons of oil in a frying pan. Dollop 1/4 cup amounts of the mixture into a well heated frying pan with about 2 tablespoon of oil in it for each batch. Normal frying pan should hold 3 at a time.
3. Cook covered on medium high for about 5 minutes. Turn, leaving the lid off the remaining time so that they get crisp. Cook until well browned.
4. Serve drizzled with something sweet, like maple or agave syrup. These are a healthy and delicious.
