General Tao's Tofu

What you need: 

1 (12 ounce) box firm tofu, in 1" cubes (frozen and thawed, if desired)
1 egg equivalent (e.g., EnerG Egg Replacer), prepared
3 tablespoons + 2 tablespoons water, divided
3/4 cup + 1 tablespoon cornstarch, divided
vegetable oil for frying + 3 tablespoons vegetable oil, divided
3 green onions, chopped
1 tablespoon minced ginger
1 tablespoon minced garlic
2/3 cup vegetable stock
1/4 cup granulated sugar
2 tablespoons soy sauce
1 tablespoon white vinegar
1 tablespoon sherry, optional
red pepper, to taste
steamed broccoli, to serve

What you do: 

1. Mix the egg replacer as specified on the box and add an additional 3 tablespoons water. Dip tofu in egg replacer mixture and coat completely. Sprinkle 3/4 cup cornstarch over tofu and coat completely. Watch out that the cornstarch doesn't clump up at the bottom of the bowl.
2. Heat oil in pan and fry tofu pieces until golden. Drain oil. Heat 3 tablespoons vegetable oil in pan on medium heat. Add green onions, ginger, and garlic; cook for about 2 minutes. Be careful not to burn garlic.
3. Add vegetable stock, sugar, soy sauce, vinegar, sherry, and red pepper.
4. Mix 2 tablespoons water with 1 tablespoon cornstarch and pour into mixture stirring well. Add fried tofu and coat evenly.
Serve immediately with steamed broccoli over your choice of rice.

SO HOW'D IT GO?

OH  MY GOD THE SAUCE!!!!!!!!!! the sauce was one of the yummiest things I've had in a long long time. 

I biffed on the tofu a bit though.  Totally my fault.  I should have done the dipping individually method that others have suggested, instead I just threw everything in together at once and the corn starch got clumpy and the tofu didn't fry very well..

but it ended up still tasting really good so next time I just have to be a bit more careful with the tofu and I have a new favorite recipe.

This recipe is awesome. It's one of the few recipes I keep going back to and also my boyfriend's absolute favourite tofu recipe. Crunchy, sweet and sour...so perfect!

I liked the flavor of the sauce, but I thought the tofu was really difficult to make....the oil splattered EVERYWHERE and I thought the whole dish was just too greasy.  The cornstarch coating stuck to the plate and the bottom of the pan.  I'm all for investing time into a good recipe, but this one just seemed like more trouble than it was worth.  Maybe I'll try the sauce on just veggies or something. : )

The first time i tried this recipe it was a disaster, but the second times a charm :)

I took my time and coated groups of 6 tofu pieces with the egg replacer in one bowl, then corn starch in a seperate bowl instead of dumping the corn starch over all of them. It was alot less messy!

I also added a little of bragg's liquid aminos and it made the flavors really pop.

I made this for my girlfriend one night and it was fun to make and suuuuuuuuuuuuuuuuuuuper tasty!!!  Yay!

But beware the cornstarch if you're going to bake the tofu instead of fry it.  Less is more people!!

This recipe was amazing! Even my carnivorous husband even enjoyed it. One thing I would change would be to cut the tofu chunks smaller so when frying, it has an even texture through and through. To evenly "coat" the tofu with cornstarch, I put the cornstarch in a Ziploc bag first, then put the "egg" covered tofu in, then shook it up. Then as I pulled each chunk out, I shook off the excess.
Everything turned out great - the sauce was simply amazing. I couldn't find minced ginger, so I used ground ginger instead, and it still turned out fine. It didn't take me too long to cook, maybe 45 min. max for everything. A+ :)>>>

FANTASTIC! My husband and I are just trying out this vegetarian thing and this was super. He said it was his favorite dish... including meat dishes!

DELICIOUS. was cooking rice and broccoli at the same time, was hard to make the meal with all four burners going. took a minute to get the hang of the 'egg' wash & cornstarch, just added a teeny bit more water to get it from sticking together so much! will DEFINITELY make again! can't wait to experiment with different sauces on it!

my first attempt at this was a complete mess haha.  the corn starch was ripping the tofu pieces appart cause it was so sticky.  I think i might have been trying to do things too quickly, but i am going to try it again. my brohter liked it even though it looked bad :)
