Fruit Pizza

What you need: 

1 3/4 cup unbleached white flour(CRUST)
1/2 cup whole-wheat flour
3/4 teaspoon salt
3 Tablespoons sugar
3 Tablespoons soy milk
3/4 cup canola oil
8-9 ounces soft tofu (FILLING)
1/4 cup sugar
1 Tablespoon soy milk
3/4 Tablespoon orange rind
3/4 teaspoon vanilla
2 Tablespoons 807]cornstarch (GLAZE)
1/2 cup sugar
3/4 cup orange juice
1/4 cup water

What you do: 

Follow these instructions to make the crust, filling, and glaze.
CRUST: Mix all ingredients by hand or with a pastry blender. Spread evenly onto a greased pan. Bake 15 minutes at 375 degrees until it is a deep golden brown. This crust must be completely cooled before filling.
FILLING: Whip the tofu in a blender or food processor or with a mixer until it is fluffy and has no lumps. Add the rest of the ingredients and mix well. Spread the mixture evenly on cooled crust.
FRUIT: Place sliced or chopped fruit on top of the filling. (Strawberries, kiwi, orange, grapes, bananas, etc.)
GLAZE: Stir all ingredients together and bring to a boil (keep stirring until the mixture has boiled – otherwise, it will stick). Once it is boiling, stir for 1 minute or until mixture looks clear. Remove from heat and drizzle over fruit.

I can't wait to make this my mom made one similar but want to try this with no dairy (try to go vegan) Let you know how mine comes out!

I made this last night for non-vegan friends, and half way through dessert someone thought to ask me what was in the filling since it wasn't dairy. They couldn't believe it was tofu! Whenever I need to impress with a dessert, I'm totally making this. It looks amazing, and tastes great. The only thing I would do differently next time is save some of the fruit to put on AFTER I use the glaze. It doesn't affect the taste at all, but since the glaze is a little gooey-orangey, the colors of the fruit get muted a bit,and it would make it a little prettier to have a few pops of color on top of it. Amazing recipe, and I can't wait to make it again!
