Fried Spinach

What you need: 

2 pounds fresh spinach or 3/4 pound frozen leaf spinach, thawed
1 tablespoon oil
1 teaspoon salt
1 tablespoon soy sauce

What you do: 

1. Heat the oil in a large sauce pan, add the leaf spinach and fry over fierce heat for 1 minute, stirring all the time, until the spinach softens.
2. Add the salt and soy sauce, mix well and cook gently for another minute.'

This was great with garlic, a little soy and tehina... quick and delicious..thanks

dropped the soy sauce and added garlic, didnt bother draining the frozen spinach & let the moisture boil off.  really good side dish  :)

This was yummy and quick. I took David and Anna's advice and dropped the salt and used minced garlic. I also added some tahini sauce and soy milk while cooking. It came out like creamed spinach.  ;D
