French Toast
What you need:
2 tablespoons vegan mayonnaise (I use Vegenaise)
1/4 cup nondairy milk (I use soy)
1/4 teaspoon vanilla extract
1/8 tablespoon cinnamon
nonstick spray or margarine
4 slices bread
What you do:
1. In shallow bowl or pie plate, whisk together vegan mayo, milk, vanilla and cinnamon.
2. Spray skillet with nonstick spray or melt a little margarine in it, put over medium heat and bring to a sizzle.
3. Quickly dunk each side of a slice of bread, using side of fork to scrape down excess back into plate. Fry in skillet a few minutes, flip and fry other side.

I loveeeeeeeee this recipe! It's exactly like french toast. And it smells wonderful! I added a little nutmeg and pumpkin spice to the mix too.
I always think when I make this recipe that the bread is too soggy but cooking it for a good amount of time always crisp it up. :)>>>
i made this for breakfast today. super yummy and i love that i had all the ingredients on hand. vegenaise is such a versatile ingredient
Very good. I ran out off eggs and had some lowfat mayo on hand. This mixture was very thick and only worked for two slices of bread. I think I will spread it on the bread next time.
i was thinking about using veganaise in french toast and googled and found this recipe. It is really good. I did add a little nutritional yeast to it, however I have yet to find a vegan french toast recipe that does not turn out soggy. So I am thinking of adding a little cornstarch next time. Yet the flavor was perfect.
I also expected this to have an odd taste because of the vegenaise, but oh how happy I am that I tried this recipe anyways. I ended up making the recipe twice last night...then again tonight. Hah. This is my new favorite breakfast!
Yum, yum, yum. Good call on the Vegenaise! My only problem making this was that I didn't have enough of the coating for my bread (maybe I have huge bread, I dunno), so I ended up making an extra half recipe of it in order to coat all the bread. But it was flavorful and crispy and golden and awesome--quite possibly the best vegan french toast recipe I've tried.
This recipe was amazing! I made it with sprouted grain sesame bread (Food for Life brand), which can be very dry. It soaked up the veganaise mixture without becoming soggy. Being a new vegan, I appreciate the lightness of this recipe (as with many other new discoveries) with the lack of eggs. Thanks so much for this, it is my new Sunday breakfast! :)>>>
Fan-tastic. Really. I love it so much!! I'm not the kind of person to like banana in my recipes, and corn starch never works or tastes right for me in baked goods for egg replacer. Vegenaise was the perfect flavour!!
As a side note, I made mine with vegan french bread from publix. It was perfectly done, kind of like texas toast. The batter browned perfectly and tasted great.

This recipe is truly a great find, more people should try it! I made it with soy milk for the first time and it's even better. I prefer using a little margarine because it gives it a more toasty flavor than with oil. I make this whenever I have bread lying around. Thanks ANGEAL.
