Feel Better Soup
1 large or 2 small leeks, cut into 1/4" rings
vegetable oil
2 to 3 cloves of garlic, chopped
6 cups vegetable broth
2 medium sweet potatoes, washed & chopped into 1/2" pieces
1/2 a celeriac, chopped into 1/2" pieces
1/2 cup green lentils
1/2 teaspoon ground sage
1/2 cup pearl barley
1 cup shredded black kale
salt, to taste
pepper, to taste
1. Saute leeks in a bit of oil on medium-low heat for 5 minutes. Add the garlic.
2. When the garlic starts to become fragrant, add the broth, sweet potatoes, celeriac, lentils, and sage. Cover the pot and bring to a boil. Reduce heat and let simmer, covered, for 15 minutes.
3. Add the barley, cover again and let simmer for another 15 minutes. After this time, test the barley and lentils and add more liquid if need be. Once the lentils & barley are almost done, add the kale and let simmer for another 5 minutes.
4. Remove from heat and let sit for a couple of minutes covered. Taste and add salt & pepper if you want. Serve with a slice of fresh rye bread or some crackers. This will make you feel cozy on a cold day!

Source of recipe: My roommate and I wanted a delicious comforting soup, so we threw this together. It was all I'd hoped for and more. Celeriac is great for folks who like a milder celery flavour.
