Favorite White/Yellow Cake
1 1/2 cups flour
1 cup sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup icy cold water (important)
1/2 cup oil
2 teaspoons vanilla (Madagascar vanilla gives a better vanilla flavor)
2 tablespoons lemon juice
1. Preheat oven to 375 degrees F. Grease an 8" or 9" cake pan. In a bowl, sift together flour, sugar, baking soda and salt until very light and airy, about 3 times.
2. In a small bowl, combine cold water, oil, and vanilla. Add liquid ingredients (except lemon juice) to dry and combine. Once the batter is combined, add the lemon juice and stir quickly then pour into prepared pan.
3. Bake for 25 to 30 minutes or until cake tests done with toothpick.
This recipe tastes like a typical omni vanilla cake. It rises extremely well and is light, fluffy, moist and rich at the same time.
SO HOW'D IT GO?
I made this cake for a co-workers birthday. I've only made Chocolate Vegan deserts before and was a little anxious to try a new kind, but it turned out great!
The cake was definitely a little more dense that I would have liked - I attributed that to my over mixing (I made a rainbow cake and had to mix in the food coloring) - but everyone agreed that it was delicious. My bf watched me make it and as soon as he tasted the batter, he requested one of his own too! perfection.
I subbed the lemon for apple cidar vinegar because I really don't like lemon, and it did the job just as well.
The cake is really easy to make, but its definitely dense. It rose really well also - which is sometimes hard to find in vegan cakes
This cake was very tasty!! it was a little more dense then i had expected, almost like a sweet bread (maybe i did something wrong) but i topped it with jam and a 'cream cheese' maple syrup frosting! yummmmmm! thank you for the post!!
I wanted to make an almond flavored cake and couldn't find a recipe, so I looked for a yellow cake recipe instead. I made a few changes, and the resulting cake was great! First, I used whole wheat pastry flour instead of regular flour. Second, I don't have a sifter, so I just mixed the dry ingredients really well with a fork. Third, I substituted applesauce for half of the oil. Fourth, I didn't have enough fresh lemon or lime juice (and my husband can't have the bottled stuff), so I used apple cider vinegar to provide the acidity. Lastly, and most importantly for my purpose, I substituted pure almond extract for the vanilla extract. I highly recommend trying this variation!
I was thinking all day I wanted to make cake and came across this one. As soon as I saw it, I couldn't WAIT to try it (hubby LOVES yellow cake/chocolate frosting). Made the recipe exactly and the batter was delish -- always a good first sign for me! I have been so excited waiting for the cake to bake, cool, and for me to eat a good dinner. ;) I just finished a piece and it was wonderful. I will say that it almost tasted a little...cornmeal-y... Not sure what the issue is there, but that's not a bad thing to me. (I'm wondering how it might taste after sitting overnight, but sadly I don't think it will make it until tomorrow! :D) I made chocolate frosting with a little earth balance spread, vanilla, cocoa powder and powdered sugar and it is a wonderful combo. Can't wait to make it again!! Thanks!

This was a big hit with my mom. She thought it was a little too sweet but still good. I made a half recipe and made cupcakes. They are light and fluffy.
That was the probelm! It did not taste like regular cake lol! However, in the meantime it does not taste like regular cake without eggs, but being a Vegan, Vegetarian, I believe it is a great substitute for cake! Being that it is a cake that you can abriviate so much with! All matters about health and wellbeing and what the body is able to digest! I found it to be very sweet myself, but still again something that you can alter and have fun with. Hey, maybe we will be the next Food Network Stars lol! Later gators!
I made this tonight. Used everything but the vanilla and lemon juice, very easy to make. It does look very watery at first, so it's best to use a mixer like I did......I thought it turned out great :)
doesn't fall apart, yet are moist, A++
Of course, if your expecting it to taste EXACTLY like regular cake, it doesn't.
However, I actually prefer this to the cakes with eggs I made when I was veggie ;D
Sweet enough to eat without frosting (I made cupcakes with no frosting, they were still awesome)

This cake definitely tastes best the next day and gets better as it sits! It has been 7 days from last input and the cake is still moist. Being I made quite a bit of it lol, for a heartshape, square and round etc.,! " There's alot of cake.!" "And my husband loved and loves it. So that is all that really matters!" This cake is the type of cake that you can really have fun with interms of the way it could be baked...............coconut frostings, chocolate chips, cocoa powder, perhaps even ginger spice, nuts, dried fruit like Christmas cake fruit, whatever you fancy, pieces of cut up apple etc.,. So that is it and I will be putting this recipe back into the recipe box for another day! Take care guys and enjoy making the cake over and over again. It definitly is not a boring cake. Lots and lots of varietable options lol. Enjoy and have fun!
I've just finished baking this cake. I have to say that at first it didn't seem to be good, but when I cut and tried it... mmmmmmm..... I liked it!!!! It's moist and dense!!! It's great! I think I will be making it quite often now. My husband tried it (and he is a picky guy) ... he loved it! I have to find good frosting and try to make it with walnuts or other variations :-)
I encourage everyone to try this cake. It's really good!
