Molasses Snack Cake
1/2 cup unsweetened soymilk
1/2 cup water
1 teaspoon apple cider vinegar
1/2 cup blackstrap molasses
1/2 cup dark brown sugar
1/2 cup vegan mayonnaise
1/4 teaspoon sea salt
1 teaspoon baking soda
1 teaspoon ginger
2 cups whole wheat flour
1/4 cup coffee
3 tablespoon dark brown sugar (or sweetener of choice)
1) Preheat oven to 350 degrees Fahrenheit. Lightly coat bottom of 8x10" square pan with margarine.
2) Stir the soymilk, water and vinegar together. Pour into medium sized bowl. Add the molasses, brown sugar, vean mayonnaise, salt, ginger, flour and baking soda. Mix until moistened then pour into pan.
3) Stir the coffee and brown sugar together and pour over the top of the batter. Bake for 40 to 45 minutes. Let cool on wire rack for at least 20 minutes. These go really good with coffee.
Source of recipe: I modified the ingredients of a vegetarian mayonaise cake recipe and came up with this healthier version. Instead of using one cup of mayonaise, I reduced the amount to half a cup and used Veganaise intead. I added iron-rich blackstrap molasses and topped the batter with sweetened coffee.
